EGG FRIED RICE
















spices:

1 bay leaf
2 sticks cinnamon(small)
4 cloves(lavangam)

1 elachi(powder it or just crush)

onions-finely chopped
cilantro finely chopped
mint finely chopped
turmeric
eggs 3(beaten in a seperate bowl)
6 green chillies(cut long)
1/2 sp pepper powder
2 sp ghee
oil
1/2 sp garam masala
cooked rice

take a wide pan with lid.heat oil and add all the spices .add onions,chilies ,turmeric and let them fry.
add salt ,pepper powder,chilli powder ,mint leaves,cilantro (save some cilantro and mint for garnish)and stir it for a minute.
now add egg and stir.
let it cook till desired.



add cooked rice and keep on folding it till the egg is combined with rice.
do not stir the rice(it may mash and become sticky)
add ghee and garam masala ,cilantro and mint .fold it well and cover it for 5 minutes on low flame(very very low flame).
